BBQ Meatloaf


BBQ Meatloaf Served with Chive Potatoes & Squash

Ground beef is one of my boring foods; as in the food that I have a hard time making something new with.  See I get bored eating the same old thing all of the time - hence our menu plan's differing recipes.  We do the usual: hamburgers, tacos, burritos, meatloaf, spaghetti...and then I get stuck and apparently it is important to eat things with Iron - very much so when you are prone to becoming anemic.  So we started trying new things and this BBQ Meatloaf came up - we tried it a few months ago and it was heaven at first bite for me.  The Hubs still prefers our "normal" italian style meatloaf he says we can make this one again.  So the true verdict came when both of the girls ate their entire share and Little C asked for more - three times.  Enough said.  Enjoy:

Line your crockpot with foil.
Just do it - trust me.

Start with 1 lb ground beef.

Add half a can of tomato sauce and 1 egg.

Add 1/2 cup bread crumbs (in the jar not fresh).

Add 1 tbsp honey.
Add 2 tsp worcestershire sauce.

Add one small or 1/4 large onion finely chopped.

Salt and pepper to taste.
1/4 tsp salt and 1/8 tsp pepper.

Mix with your hands until very well mixed.
The only way to tell if it is well mixed is to use your hands.
Mush everything together (hint: take off your ring or wear gloves).


Make the "BBQ" sauce:
1/4 water
1/2 can tomato sauce
2 tbsp brown sugar
1 tbsp mustard ( dijon or regular yellow)
1 tbsp worcestershire sauce
Whisk together

Place meat in crockpot (on foil)
Shape meat into a "loaf" looking thing.
Pour sauce over (hint: pour gently not spilling over foil)
If you do spill just note that it is actually not too bad to clean the foil must help somewhat.

Eat all of the meatloaf and make mashed potatoes of some sort!

  1. haha can't believe I forgot to put that in - I did mine on high for 4.5 hours or you could do low for 8!
