Steak Pasta Salad

One of my favorite summer recipes this steak pasta salad is a full meal and has a bit of a bite in the salad dressing - we make it at least once a month during summer! Marinate Flank or Flap Steak in either Salt & Pepper or McCormick Steak Seasoning Cook, Drain, & Cool Pasta (you need about 2 cups) Wash and chop half a head of lettuce. Slice Roma or Cherry Tomatoes (I used about a cup chopped or two whole tomatoes) Add tomatoes to salad greens! Mix Dressing: 1/2 cup vinegar, 2 tbsp olive oil, 1/2 tsp oregano, 2 tbsp mayonnaise, 1 tsp salt, 1/2 tsp cumin, 1/4 tsp cayenne pepper (optional) Add some cooked and cooled corn (`-2 cups) to your salad. Grill your steak.  3-5 Minutes on each side over medium high heat. Add pasta to the salad. Chop Steak into bite size pieces. Add steak to your salad. Add dressing and toss to coat. Serve with garlic bread and eat until your button bursts (or maybe that is just me)! What's your favorite summer meal?!?

Ocean Animals Theme Learning

Continuing along with our beach theme from last week we took to exploring some different ocean animals this week! We started by reading Rainbow Fish and creating Rainbow Fish We talked a lot about sharing and not hoarding things for ourselves and also about how sometimes we have to sacrifice to make other's happy. Then we read Swimmy (I Love this book) and recreated their teamwork! We talked about working together to accomplish goals and such! Sorry our Octopi are sideways I am having issues switching htem! We colored and decoarte octopi using beads as "suckers" we also watched some National Geographic videos to learn some fun facts! We recreated jelly fish using coffee filters and yarn then watched some online streaming of jelly fish! Happy Thursday!

The cantaloupes are ripening quicklywe picked six this week! Staycation!

 This year the Hubs and I are traveling to Pennsylvania for his graduation from Penn State's MBA program and after much deliberation we have decided to leave the little ones behind.  With that being said we still wanted to spend some quality family time together and thus decided to have a 4 day "staycation"!  Our 4 days started out with a trip to Newport Beach - this being Little C's first time at the beach since before she was walking it was quite the new adventure!  Both girls loved the sand and eventually the water but most of all the people!  We met some lovely people from Canada and Colorado and had a ton of fun all day! Big C buried in sand! Daddy's Myan Ruins castle! Little C loved the sand - and had it everywhere! Sand angels! Didn't wait two seconds before digging in! Theme Learning - Beach Theme!

We started off by reading some great books! Then we made a beach picture issuing cricut cutouts, markers, construction paper, and cotton balls. We also went to the beach as a field trip! And made treasure boxes for our shells - using popsicle sticks and shells! Happy Learning!
