Recipe: Stuffed Bell Peppers


This is a monthly summer meal around our home - but it wasn't always that way - in fact before getting married I probably wouldn't have even tried these.  But alas we are trying to create wholesome and yummy meals for our family and so we tried and loved this recipe - as we hope you do too!


 Step 1: Slice the top off the bell peppers.  (Any color work)
 Step 2: Core the bell pepper so you have a hollow area.

 Step 3: Bring a pot of water large enough to fit your peppers to a boil.

 Cook 1 cup of white rice in your rice cooker or on the stove top.

 Chop about a 1/4 onion.

 When water is at a boil - boil the peppers for about 30 minutes.
Less if you like them crisp and more if you like them softer and more cooked.

 Heat a skillet to medium high heat.

 In said skillet, brown 1 lb of ground beef.

 I throw in about 2 tbsp. of taco seasoning for some added flavor.

 When rice is done add 1 cup of cooked rice to the chopped onion.

 Then add the cooked beef and either 1 can diced tomatoes or 1 cup tomato sauce.

Stir together in bowl - adding some shredded cheese if you like.

Then stuff the peppers, top with cheese and either
a) bake at 350 for 15-20 minutes
b) grill on the bbq for 15-20 minutes

Serve and enjoy!
